100% Macabeo. 8 day carbonic maceration and bottled before the end of fermentation. Aging 8 to 16 months on slats.
This cuvée is a rarity because this sparkling natural is a 100% Macabeu produced from vines located at a place called La Made, in the alluvial plain of La Palme. The subsoil is clay-limestone, with rolled pebbles on the surface.
After manual harvesting in small boxes, the bunches are pressed and the juice is poured apart in stainless steel vats. The bottling takes place before the end of the fermentation and is followed by an aging of 8 to 16 months on slats. The disgorging is done by hand, before recapsulation, all without added sulfur (natural sulphites <10mg / liter).
This sparkling natural surprise you with its unusual profile on orange peel notes. Its energy bubble will accompany you to a final marked by beautiful bitters.
